Going Veggie

One of my goals is to cook more, as doing so will help me eat healthier and save money. I recently made the decision to reduce/eliminate my meat consumption (chicken, beef, pork aka bacon... tear). As such, i've been cruising the web for some delicious vegetarian and seafood (i'm still eating it!) recipes to try. Voila a list of my future conquests:

1. Melissa Clark's Roasted Broccoli with Shrimp



2. Braised Winter Greens with Chickpeas, Onions, and Garlic from Orangette



3. Angel Hair with Asparagus, Sun-Dried Tomatoes and Pine Nuts from fresh365



4. Chickpea Salad with Lemon and Parmesan from Orangette



5. Spicy Two-Cheese Penne with Garlic Thyme Breadcrumbs from fresh365



P.S. i HATE plugging Starbucks, but i recently purchased this awesome cup from the Starbucks in my building and well... i love it!! It's double-walled so no sweating, the straw can't fall out, and i foresee using it a LOT as Sbux's iced passion fruit tea is one of my summertime faves...

I would recommend this. http://www.seriouseats.com/recipes/2009/05/dinner-tonight-salmon-and-pea-tagliatelle-recipe.html I made it last night. It needs some tomatoes or artichokes, some sort of acid to spice it up. I liked the yogurt instead of cream sauce.

Would love to know how your recipes turn out (the shrimp and brocolli one looks particularly yummy). I am trying to only eat organic meat which is widely available in supermarkets here...

Oh the broccoli & Shrimp and Penne look yummy!

I'm trying to do the same, but if I eat meat it needs to be organic. Let us know how your recipes go.

Congratulations!!! I went "veg" a few years back but still ate fish. Earlier this year I released fish from my diet (found out they're not a vegetable, whoda thunkit?) and have never felt better! You're doing a great thing both for your bod and for the animals of the world. I've found a great resource to be a fabulous woman named Colleen Patrick Groudreau, she does a podcast called vegetarian food for thought that I've become addicted to. Each podcast is STUFFED with information about food, same goes for the message boards at the compassionate cooks website. Enjoy!

ps I made the asparagus pasta with sundried tomatoes and pine nuts and it was DELISH!

Have made the chickpeas with parmesan a million times - it is SO good :) Ditto on the roasted brocoli and shrimp. Yum.

Yum, those all look very good! I found a really good vegetarian recipe in Real Simple today - it's corn, feta, hazelnut, lime juice and jalapenos - it looks delish and I can't wait to actually make it! So if you get a chance to flip through the mag, definitely check it out.

I love these recipes. There are a couple that I am going to have to try very soon. If you need more fabulous vegetarian recipes, let me know. I have been experiementing and working towards recreating several of my favorite Whole Foods deli items.

Carolyn...I totally forgot that you are a Texan. You will have to join me for the yoga retreat. It will be with Silky Hart of Expressive Hart and Tracy Carruth of Yoga Balance. The location is still be worked out. It will combine art, yoga, and lots of spa treatments.

Congrats! A veg lifestyle is great and a fab way to go! You will find that eventually the craving for meat disappears and you will feel better inside, physically and morally.
